Egg In A Frame Sandwich with ramp butter toast

Happy Mothers’ Day! Presenting breakfast in bed to mom is a common tradition for many. So here’s a breakfast recipe I’ll be making for my mom. She actually made egg-in-a-frame for me growing up so it’s a perfect pairing of breakfast and nostalgia! This childhood favorite goes by many names (egg in a frame, egg in a hole, hole in one, etc.) but it seems to be a go-to for mom’s everywhere. Read on for a slight remix on this classic!

Ingredients

  • 2 eggs (local eggs if possible like the fresh to death Primal Supply Meats eggs I used)

  • 2 slices bread (Martin’s Potato Bread recommended)

  • a knob of butter

  • garlic salt

  • onion salt

  • freshly cracked black pepper

  • cheddar or mom’s choice of cheese

  • olive oil

Directions

Use a small cup or cookie cutter to punch holes in the slices of bread. Toss a knob of butter in a non-stick skillet and turn heat to medium. Place the hole-y slices of bread in the pan and crack your eggs into the holes. Season with garlic salt, onion slat, and black pepper. Be sure to season the bread as well.

Once the bottom is a little browned, drizzle a bit of olive oil onto the top of the breads. CAREFULLY, flip over the slices and gently cook the egg for 30 seconds (just until the whites are cooked). Place a thin slice of cheese on one piece of eggy toast and sandwich together gently.

Serve with the toasted punched out circles and mom’s favorite butter or jam.
